Tommy's Tips

  • For juicy results, do not open the parchment paper before cooking is complete and let the chicken rest for 10 minutes before serving.​

  • Try sprinkling with fresh herbs and extra lemon juice at the end.​

  • For even richer flavor, add kefalotyri cheese along with the feta.​

  • Pair with fresh seasonal salad or vegetable rice for a complete meal.

  • Roast in a Dutch oven or parchment paper in the oven, using chicken fillets or portions, tomato, peppers, onion, mustard, lemon, cheeses (feta and kefalotyri), aromatics (thyme, oregano), and olive oil.​

  • Marinate with mustard and herbs, wrap in parchment to retain juices, and bake at 170–180°C for 1–1.5 hours.

  • Serve with potatoes or vegetable rice.
